Join us for a presentation by local cider maker Richard Ihrig founder of String Theory Cider of Cumberland, WI, along with a seasonal local taco bar provided by Farm Table alums, chefs Sarah and Marlee—now known collectively as Fiddlehead Kitchen.
This is also a Release Party for String Theory’s 2022 vintage. Richard’s presentation and slides will begin at 4 PM and will be followed by the opportunity to sample and purchase bottles of String Theory’s three varieties, Pirouette, Meadowlark, and Picnic. Of course, because cider contains alcohol, you must be 21 years old to purchase or consume it.
At 5:15 pm, following the cider sampling, there will be a taco bar featuring pork carnitas and marinated shiitakes, tortillas, radish pico de gallo, spicy sour cream, greens, pickled onions, charred spring onions, radish, and cheese (vegetarian/vegan options available), and a delectable dessert. Fiddlehead Kitchen will feature all of the best of our local farms who supplied Farm Table Restaurant over many years. This is a BYOB event and no alcohol will be served or available for purchase, except for String Theory Cider.
This is a ticket-only event held at the new space directly adjacent to Dragonfly Gardens, one mile south of Amery at 491 State Road 46. Tickets are $50 and proceeds will help support Farm Table as it seeks a new role in promoting local food, local farms, and seasonal eating.
Farm Table’s Board will be in attendance to discuss the future of local food in this area and what directions are open to further build on Farm Table successes.

String Theory Cider
Richard Ihrig is the founder of String Theory Cider in Cumberland, Wisconsin, which uses the juice from true cider apples, a unique, refreshing, and award-winning cider. Richard will talk about his operation and detail the time-consuming traditional method he uses to make cider in the heart of northwestern
Wisconsin.
Fiddlehead Kitchen
Fiddlehead Kitchen was founded by Chefs Marlee and Sarah and resides in the Barred Owl cocktail bar in Balsam Lake, WI. Sarah brings 10 years of experience in the industry from serving, to food trucking to fine dining, and was acting head chef at Farm Table Foundation for 5 years. Marlee brings 8 years in the industry with fine catering, and a mastery of sourdough bread and pastry. They both have worked on organic farms and value utilizing the best ingredients from folks stewarding the land. Together they are the Fiddlehead Chefs that are excited to serve seasonal, farm-focused food with flair. They do catering, pop-ups, and private cheffing. Follow them on Facebook and Instagram.
Farm Table Foundation is a nonprofit with a mission to grow local food culture through education, research, and training. Our ticket prices for our programs reflect living wages for our staff, supporting knowledgeable and qualified instructors, and paying local farmers a fair price for the produce and proteins we source from them.
